About Single Pot Still
Our distillery is fully dedicated to making Single Pot Still Whiskeys. All of our SPS whiskeys are mashed, fermented, triple distilled, and aged on site in Arvada, CO out of Colorado barley and mountain spring water. See the Our Spirits page HERE for the individual whiskey selections!
Single Pot Still Whiskey originated in Ireland and has a mashbill of a minimum of 30% unmalted barley, a minimum of 30% malted barley, and up to 5% other grains. The whiskey must be fermented and distilled off grain and must be distilled in copper pot stills. All of the regulations for this style of whiskey are laid out in the Irish Whiskey Technical File.
As America’s first SPS distillery we self-regulate according to this document for all of our production processes since there are no regulations issued for this style of whiskey through the US Tax and Trade Bureau. All production and aging for our whiskey happens at one single location at the distillery giving us the ‘Single’ designation to our Pot Still Whiskey.
NO! Irish Whiskey is a protected Geographical Indication under EU regulation and can only be made in Ireland. While we honor the distilling traditions of our Irish ancestors we are 100% American Single Pot Still Whiskey made with local Colorado barley, mountain spring water, and aged at high altitude. We are proud to be America’s FIRST Single Pot Still Distillery.
American Single Pot Still Whiskey is a brand new category in the market. Like American Single Malt whiskies that have been gaining popularity, the liquid we produce is inspired by old European traditions and processes, but are distinctly and specifically made in America.
Talnua Whiskey
Our oldest whiskey is currently 4 years old. We started distilling in 2018 and every drop of our Single Pot Still Whiskey is made in house.
Olde Saint’s Keep is 100 proof / 50% ABV, as is our Virgin White Oak Cask and Bourbon Cask & Stave Series.. Our intro lines are at 86 proof / 43% ABV.
Neat, water, ice, cocktails, drink it how you like it, it’s your whiskey afterall! While we recommend trying our whiskeys neat, a few drops of water can really open up the whiskey and uncover new flavors to your favorite sip. If you prefer ice we recommend a large cube or sphere to chill the whiskey and slow down the dilution. We have a whole list of amazing whiskey cocktails for you to try in the cocktail lounge. If you need any suggestions email us at connect@talnua.com and we can provide you with some house recipes.
We sure do! Check our cocktail recipe page here.
Talnua Gin
Our American Single Pot Still Gin is a completely unique expression that is made with the same malted and unmalted barley mash bill as our whiskeys and triple distilled in traditional copper pot stills. Seven botanicals are introduced during the third distillation with the grain itself acting as an eighth influence on flavor. The seven botanicals are Juniper, Coriander, Cardamom, Orris Root, Heather, Lemon Peel, Orange Peel.
Because the gin is a barley-based distillate, it is more comparable to a dutch genever. The use of copper pot stills means that we do not have a neutral spirit after our distillation process and as a result, you can taste a lot of the grains in our base spirit. It is not quite as juniper/botanical forward as a London Dry gin for that reason.
