Heritage Selection Whiskey

A Blend of Pot Still & Grain Whiskey

Our Heritage Selection pays homage to the tradition of blending whiskeys by marrying our estate produced American Pot Still Whiskey with Grain Whiskey distilled in Ireland; aged a minimum of 18 months. The pot still whiskey is produced using an unmalted and malted barley mash, triple distilled in copper pot stills, and aged in charred American white oak casks. The grain whiskey was hand selected and brought home to Colorado to be finished in second-fill Colorado whiskey barrels. These two whiskeys are blended together to create a distinctly Irish-American expression.

Continuum Cask Whiskey

American Single Pot Still Whiskey Aged in virgin American white oak then vatted into a Continuum Cask

Our Continuum Cask line is our estate produced Single Pot Still Whiskey, aged for a minimum of 18 months in virgin American white oak casks, then harvested and vatted into our larger solera-inspired continuum cask. The continuum cask is never fully emptied. As whiskey is removed from the cask, an equal amount of new whiskey enters. Thus, the average age in the cask will gradually increase as maturation continues over many years. The result is a whiskey with beautifully layered depth and complexity of flavor.

American Single Pot Still Whiskey, Aged 3 years in ex-bourbon white oak casks with charred virgin American white oak staves

Our Virgin White Oak Cask line is our estate produced Single Pot Still Whiskey aged exclusively in charred, first fill American white oak barrels. Our mashbill of unmalted and malted barley is triple distilled following old-world customs, and then matured in new charred oak casks; an American innovation. This marriage of whiskey heritage results in an expression unlike any other. A true example of Gaelic tradition meeting American pioneerism.You can expect notes of sweet caramel and toffee followed by bold spice and a long drawn-out finish.

Virgin White Oak Cask Whiskey

American Single Pot Still Whiskey, Aged 3 years in charred virgin American white oak casks

The Cask & Stave series is our estate produced American Single Pot Still Whiskey aged using a process inspired by winemakers. From the beginning of maturation, virgin charred oak staves are introduced into used cooperage, allowing for a diversity of flavor traditionally unachievable from a single cask. Cask & Stave meets you with bright floral notes, new mown hay, and vanilla bean.

This expression consists of our estate produced Single Pot Still Whiskey which is harvested and then finished in used Peated whiskey casks; imparting a smoky flavor to the spirit. Bold, smoky oak notes finish out our traditionally triple distilled raw and malted barley mashbill.

Not your G&T gin, this gin is made with our single pot still mashbill of unmalted and malted barley and triple distilled in the traditional genever style in pot stills. Our process results in a bright, citrus and cereal sweet gin. Perfect in a Tom Collins or Bees Knees.

Barrel Finished Gin

American Single Pot Still Gin

A unique product offering, this gin is our Finglas recipe that has been finished in American White Oak barrels. The complex character of the oak flows through the honey sweetness of the barley and provides a full-bodied foundation for the herbal brightness of the botanicals. Great served neat, on the rocks, or in a Mule or Martinez cocktail.
